This is the season for pumpkins! So like everyone
around me I am cooking with pumpkins. Recently
I made hash browns out of them instead of
potatoes. By taking roasted pumpkin, yellow
onions, green peppers, chickpea flour, eggs with
some hot sauce and salt and pepper. Then I pan
fried them in a skillet. It is very good.
A great taste for the Fall.
2 cups of roasted pumpkin
1 cup of chopped yellow onions
2 eggs
1/2 cup of chickpea flour
1/2 cup of chopped green peppers
Put everything together in a bowl mix well and fry three inch patties in a skillet coated with grape seed oil. Brown each patty on both sides until golden brown. If you love potato hash browns, you will really love these. Just try it once!
